Evolution is the change in characteristics or traits of an organism throughout several generations and is responsible for the emergence of new characteristics and variations within a species. Video 11 explains the evolution of lactose tolerance in humans, one of the key features we have developed over generations. Lactose is the main ingredient present in milk, which almost all humans consume. All infants can digest it, but the majority of adults cannot digest milk. Interestingly, only adult humans are some of the only mammals that can digest milk; this is due to the presence of an enzyme that enables us to digest lactose; the enzyme is called lactase. The population that can digest milk is referred to as lactase persistence.
